I was looking for something warm and cosy to have for dinner tonight, though in reality I really just wanted to use the madras curry spices we bought on the weekend, when I stumbled across this recipe for Curried Cauliflower Apple Soup on epicurious.
On a lark (and because I can't remember the last time I bought cauliflower), it became my plan. And it was absolutely delicious.
Two suggestions, if you're going to try this:
(1) Add WAY more curry than it calls for. I like things spicy, so I added a full tablespoon, if not more.
(2) Forget about the cream. I pureed everything so it was only half-smooth, and even without the cream it was very thick.
Throw in some leftover brie, some crisp crackers, and some fresh fruit, and you're all set.
